Abstract
RIASSUNTO Per valutare la migliore destinazione commerciale del latte di alcune linee genetiche e le azioni di miglioramento possibili sui parametri più limitanti è stata studiata l’influenza di alcuni fattori di variabilità sulle caratteristiche qualitative e tecnologiche del latte di diversi tipi genetici (108 soggetti di Frisona Italiana, 23 soggetti di Frisona Tedesca e 8 soggetti di razza Jersey) allevati in una azienda toscana. Tra i fattori di variabilità analizzati, l’ordine di lattazione sembra essere quello che ha avuto minor effetto sottolineando una lieve migliore attitudine alla coagulazione del latte delle primipare. Lo stadio di lattazione è risultato il più significativo per quanto riguarda la produzione di latte e la sua composizione chimica. Differenze sono state osservate anche tra i diversi tipi genetici: il latte della Frisona, soprattutto il ceppo tedesco, risulterebbe poco adatto alla caseificazione, al contrario la razza Jersey, pur presentando una consistenza del coagulo scarsa, mantiene la sua buone attitudine casearia. Dal punto di vista quanti-qualitativo i due ceppi di Frisona mostrano una buona produzione di latte, rilevata in una sola mungitura giornaliera, con una buona percentuale di proteine; il grasso risulta, invece, il parametro più limitante. SUMMARY To value the best commercial destination of the milk of different genotypes and the possibility of improvement on the thresholds parameters, the influence of some variability factors (genotype, parity, stadium of lactation and season sample) on the quality and rheological parameters (r, k20, a30 and a45) of the milk of different genotypes (108 subjects of Italian Friesian, 23 subjects of German Friesian and 8 subjects of Jersey breed) has been studied; to reduce the possible influence of differing environmental con- ditions, all the animals came from a single herd in the province of Pisa and all fed the same diet. Between the evaluated variability factors, the parity seems be what it has had the little effect underlining a light better aptitude to the coagulation of the milk of the primiparous. The lactation stadium is resulted the more significant for when regards the milk production and its chemical composition. Difference has been observed also between the three genotypes: the milk of the Friesian, above all the German one, would result a few adapts to the cheese making, to the contrary, the Jersey breed, even if presenting a scarce curd firmness, holds its good cheese aptitude. From the quantitative and qualitative point of view the two Friesian types show a good production of milk, with a good percentage of protein; instead, the fat is scarcely represented.
